In anaerobic conditions, pyruvic acid undergoes fermentation to regenerate NAD+ so that glycolysis can continue. In muscle cells, pyruvic acid is converted into lactate (lactic acid fermentation). In yeast and some bacteria, pyruvic acid is converted into ethanol and CO2 (alcoholic fermentation). These processes allow for the continued production of ATP through glycolysis when oxygen is unavailable.
