The system uses a gas generator sachet that, when activated, releases hydrogen and carbon dioxide. The hydrogen reacts with the oxygen inside the jar—with the help of a catalyst (typically palladium)—to produce water, thereby effectively eliminating the oxygen. The carbon dioxide then replaces the removed oxygen, establishing the anaerobic conditions necessary for the growth of certain bacteria. Modern systems may not require water to activate the sachets.
