The key hormones that stimulate glycogenolysis are glucagon (released by the pancreas), epinephrine (released by the adrenal glands), and cortisol (in some cases). These hormones activate signaling pathways that lead to the activation of enzymes like glycogen phosphorylase, which breaks down glycogen into glucose-1-phosphate. The presence of high levels of AMP (adenosine monophosphate) also stimulates glycogenolysis, especially during muscle activity when energy demands are high.
